- Kiss the bottom
Cooking pineapple should smell sweet and fragrant at the bottom. When pineapple is ripe, they turn acidity into sugar, creating the iconic aroma, explained Jennifer Pallian, BSC, RD, Nutritionist, Food Scientists, and Recipe Developers.
“Not scented? The possibility of pineapple is not ripe and will feel sour and hard. If it smells of fermentation or like vinegar, pineapple is too ripe and has passed its best time,” Pallian said.

- Check the skin color
When picking pineapple, check the skin. Full golden pineapple is usually at the peak of freshness and taste. On the other hand, mostly green pineapple may still be hard and sour, according to Pallian.
Meanwhile, if the color is really yellow, this can mean the pineapple is at the peak of freshness and must be eaten as soon as possible.
“When pineapple is cooked, the color changes – from dark green or purple to become more golden, reddish brown, or light yellow.
